Traveling as a vegan can be hard, but when I visited Santiago, Chile, I found a vegetarian restaurant that left a lasting impression. Although it was founded in 1927, the mission of the founder, to restore healthy eating in the city with fresh vegetables and fruits, still has meaning today.
